A savory herbaceous blend which can be used in place of regular salt, seasoning salt, everyday seasoning or as a garnish. One pinch goes a long way!

Ingredients
  • 1 cup coarse kosher salt
  • 1 whole bulb of fresh garlic peeled and minced (15-18 cloves or ⅔ cup, minced)
  • ½ cup white onion, minced
  • ⅓ cup fresh rosemary, finely chopped
  • ⅓ cup fresh sage, finely chopped
  • ¼ cup nutritional yeast
  • ⅛ cup fresh cracked pepper
Instructions
  1. First, prepare your mise en place (mi ˑ zɑ̃ ˑ plas) and preheat your oven to 170 degrees or the lowest temperature it will set to. You want a low setting, as the goal is to dehydrate the ingredients, not bake or cook them.*
  2. Place all the ingredients into a small bowl and mix well to combine.
  3. Spread evenly onto a medium-sized baking tray making one even layer. Place into the oven for 20 minutes.
  4. Remove after 20 minutes, stir the salt mixture and spread evenly again. Place back in the oven and for another 20 minutes or until all the ingredients are dry and dehydrated. The time needed to dehydrate the magic mix may vary depending on the temperature of your oven. Once the salt is dry, remove from heat.
  5. When cool, place the magic salt in an airtight container. Use in place of salt for a herb-like depth of flavor or as a garnish atop your favorite dishes. A little goes a long way!
Notes
*If you have a dehydrator, use it for this recipe. The temperature and time you dehydrate for will vary per machine. The salt is done dehydrating when there is no moisture left in the ingredients.
