Ready in a jiffy, this recipe has become a staple as the common ingredients are likely in your fridge. Also, sometimes you need a creamy condiment to make all that healthy food a bit more appetizing ;) A great bonus is there is no added salt in the recipe!

Ingredients
  • ½ cup plain hummus, or plain spreadable vegan cheese, or ½ wheel SriMu's Spire or Elder*
  • 2 tablespoons lemon juice
  • 1 tablespoon nutritional yeast
  • 2 teaspoons capers
  • 2 teaspoons brining liquid in caper jar
  • 1 garlic clove, peeled
  • ½ teaspoon lemon zest
  • ½ teaspoon Braggs aminos
  • ¼ teaspoon maple syrup
  • ¼ teaspoon black pepper
  • ¼ teaspoon seaweed flakes (optional)*
  • ¼ teaspoon chili flakes
  • Filtered water
Instructions
  1. First, gather your mise en place. (mi ˑ zɑ̃ ˑ plas)
  2. Place everything into your food processor or blender plus 1 tablespoon of water.
  3. Blend until the ingredients are well incorporated.
  4. Scrape the sides and add more water 1 tablespoon at a time and continue to blend until you achieve your desired consistency. You will likely need more water if you used cheese instead of hummus. I like my dressings thick but easily pourable. Taste and adjust seasoning if need. Serve with your favorite greens.
Notes
*Using hummus makes this a lighter less caloric dressing, while the cheeses make it super indulgent. Try different variations and see what you love, maybe one version you like as a dressing and the other you add less water to use as a dip!
*The seaweed flakes are optional but this is what replaces the anchovies in a traditional caesar dressing - adding that slight 'ocean' flavor. Optional as it's not a common ingredient, but great to have around and start incorporating into recipes!
