I love roasting cauliflower whole.  They look so beautiful when finished, like a piece of art.  These steps are super simple, and the roast pairs perfectly with your favorite dipping sauce or hummus.  In the picture below, I served the cauli with my cashew sour cream, and it was delightful (YUM)!

If you have never roasted a cauliflower whole, you are in for a treat! The results are absolutely beautiful. Serve as a side or main course.

Ingredients
  • 1 medium sized cauliflower
  • 4-6 tablespoons grapeseed oil (the amount you use will depend on the size of your cauliflower)
  • 2 teaspoons sea salt
  • 2 teaspoons cracked black pepper
Instructions
  1. First, gather your mise en place (mi ˑ zɑ̃ ˑ plas).
  2. Preheat your oven to 400 degrees Fahrenheit. Also fill up a stock pot with water and bring to a boil.
  3. Wash your cauliflower well and trim back the green leaves. Also, trim the stem so that the cauliflower can sit up straight.
  4. Place the cauliflower in the stock pot and boil for 10 minutes. This step is key to achieve a tender cauliflower. Remove the cauliflower and let cool for a few minutes.
  5. Brush the cauli generously with the oil. Turn around and brush the bottom as well. Brush all the white areas of the cauliflower you can reach.
  6. Next, rub the salt and pepper evenly into the cauliflower. I like to use my hands for this step. Naturally, the salt and pepper will gather in the cracks and crevasses. That's ok as it forms a bit of a crust which is delicious after it has cooked. Don't forget the bottom!
  7. Line a baking tray with parchment paper or foil. Place the cauliflower right side up onto the tray and broil for 25 minutes. When 25 minutes have passed rotate the pan in the broiler and let cook for another 20 minutes.
  8. Remove the cauliflower from the broiler. Test doneness with a knife. A sharp knife should go through the cauliflower easily and stop at the stem. If the knife does not slide in with ease, roast for another 5 minutes or until your knife test is passed. Roasting time can vary based on the size of your cauliflower.
  9. Turn the oven to broil and place the cauliflower back in. Let broil for 5 minutes, until blackened and beautiful.
  10. Remove from the oven and let cool for a few minutes. Cut into quarters and serve with your favorite dipping sauce or hummus. Enjoy!
